Recipe of Braised Rabbit with Vegetables

1 kg rabbit
4 tablespoons fat
2 carrots
1 parsley root
2 onions
2 glasses water or broth
1 kg potatoes
1/2 glass tomato puree
2 garlic cloves
1 teaspoon wheaten flour

How to cook Braised Rabbit with Vegetables.

Chop prepared rabbit carcass into small pieces, sprinkle with salt and ground pepper, fry in heated fat on a frying pan. Peel carrots and onion, wash parsley and fry it. Then put it all and fried meat into a saucepan, pour water, add tomato puree, fried in oil or fat, bay-leaf and braise to half-readiness. Then put peeled and sliced potatoes and braise to full readiness.

At the end of braising season the dish with salt, fine-chopped onion, wheaten flour, fried in oil and dissolved in broth or water, and let it boil well.
